Easy Kale Salad Recipe

  1. 1 Bag of Chopped Kale
  2. Lemons
  3. Olive Oil
  4. Apple Cider Vinegar
  5. 1 shallot Thinly Sliced
  6. Hand full of sliced almonds or walnuts (or another nut)
  7. Hand full of dried sweet cherries (or blueberries, dates / cranberries)
  8. Parmesan Finely Grated
  9. Food processor (linked here)

How to make:

Start by putting the kale the food processor to finely chop it. I have the food processor linked above & usually will have to repeat this 3-4 times because it is small. Once it is all chopped, toss it all in large mixing bowl with the shallots.

Next, juice 3-4 lemons depending on size to get about 1.5 cups lemon juice. Add 3/4 cup olive oil & 1/4 cup apple cider vinegar. Mix together & pour over kale & shallots (you want a good amount of dressing, because it will soak into the kale). Add 1.5 cups parmesan, nuts, and dried cherries. MIX it all up, cover it, and place in the fridge for 1-2 hours for best results.

If I make a big batch, it is perfect for lunches for a couple days. I’ll add salmon or chicken on top & it is DELISHHH! (:
